Can’t believe it’s Thursday

This has been one of those weeks where I’ve felt like I’m hanging on by a thread. (I really need to get out more!) The kids (specifically Madeline, and she doesn’t do anything quietly) have been getting up relatively early and it seems like the days I get woken up and drug around don’t go so well.

And it’s my cranky time o’ month if you ladies know what I mean. Ahem.

Then to top it off, yesterday morning I was dressing Adelaide and she tried to run away from me, so I lunged after her and wrenched my back. Fun times. I went to the chiropractor in the afternoon and he wanted me to come in again today. I feel at least 90 years old.

So hopefully the swelling will go down more today and I can start walking faster and feeling better.

Thanks for all of your great questions!! I’ll get to them soon. And I’ll leave that post open in case there are any more takers.

Also, I really need a few top-notch dessert recipes that are quick and easy but beautiful. I’ve got a little something going on this weekend that I can’t yet disclose but need ideas for. Thanks!

    Sorry about your back…and your long week.

    I don’t generally make “beautiful” desserts. I like them to taste good, but they don’t necessarily have to have looks to match. :)

    I feel you on the whole back/chiropractor thing. I’ve been going for the past year just so I can be able to function.

    Chocolate covered strawberries drizzled with white chocolate are one of my favorite desserts to make.

    Do you get the emails from KRAFT? They had a 4 layer Pumpkin Cake that looked to die for. I forwarded the email to you just in case.

    Mandarin Orange cake! All you do is take a basic white cake mix and add a DRAINED small can of mandarin oranges while you are mixing everything up. It tastes really yummy and people can’t believe it came from one box and a can.

    Top with cream cheese frosting and maybe some orange zesty curls for that ‘Martha’ look :)

    Good dessert in a pinch:

    put alum. foil in a large rectangular cookie sheet.
    put plain graham crackers (broken into individual rect.) on the foil.
    melt a cup of butter and a cup of brown sugar in a saucepan until it is bubbling hot. pour over crackers. put immediately into a hot, 400 oven. leave for about 5 minutes, until the sugar mix is bubbling again.
    remove immed. and sprinkle choc. chips on top, add nuts if you like, or butterscotch chips, or coconut. whatever.

    cool and divide into rect. and serve.

    (I think the 1 cup measurement is right, but in order to check, I’d have to get off the couch, so good luck…)
    If nobody else eats them, you sure will.

    Prepare yourself for the most delicious dessert ever!!! It is SO easy, but people will think it took you a lot of time!
    CHOCOLATE CHIP BUNDT CAKE

    1 pkg dark choc. cake mix
    sml pkg choc instant pudding
    1 C sour cream
    1/2 C oil
    4 eggs
    1 1/2 C choc chips

    mix all ingredients together except choc chips – in large bowl and beat for 4 minutes. Fold in choc chips. Bake in greased and floured bundt cake pan for 50 minutes at 350.

    GLAZE
    1 C choc chips
    1 cube butter
    1 TB corn syrup

    Cut up butter and add to choc chips in small pan. Add corn syrup and melt over low heat until smooth. Lade over cake while still warm.

    (for an extra touch, you can fill the center of the bundt cake with fresh sliced strawberries when entire thing is complete!)

    We’re having a rough week here, too. Our little guy started the week with a nasty stomach bug. As of today – two kids down – one to go. And two parents – Heaven help us! I’ve never washed sheets this often in my life!!

    So – I can empathize with ya on the long week. Hang in there, friend. You can do it!! :)

    Gosh, sorry about your back. I know what that’s like.

    The dessert M.K. left in her comment is soooo good. So simple, yet taste like toffee. I’ve only made them with pecan pieces and white sugar, I think. I always make them around the holidays.
