Chicken Salad (I know you love my creative title)

This is one of the throwdown meals in our house, when I realize my kids were hungry about fifteen minutes ago. I usually have these items on hand and it can be made in a big hurry.
Brown chicken in butter (on stove, in fry pan). I usually use 2-3 chicken breasts but it really doesn’t matter. Just use enough that will feed your whole family. (I also just use my kitchen shears and cut the chicken into bites, dropping them into the pan as I go.) When it’s cooled some, put it in a big bowl.
Add: a couple of stalks of washed celery (I think in that photo I had used 3), chopped into chunks. Dump in rinsed grapes, some raisins, and nuts (walnuts usually, pecans work, too). Mix in two generous spoonfuls of mayo, splash with lemon juice and stir to coat. That’s it! My kids (and hubby) GOBBLE this up, which is another reason it’s an oft-rotated meal at our house.

Scrabbled eggs whipped together with cream cheese, grits, buttered toast and bacon.
Whole wheat spaghetti, and a jar of spaghetti sauce. (If I have ground meat, I’ll make some meatballs too). Ditto Gretchen for breakfast foods too.
refried beans. 2 cans pintos, 1 can tomatoes, onion, mexican seasonings. Cook for 10-20, mash up or blend til smooth. Served with tortillas, corn, salsa and sour cream. I’ll make more if I want lots of leftovers (the hubbs loves it) and serve avocado if you have it!
My go to meals are: scrambled eggs or quesadillas.
I don’t like celery but your picture makes it looks so scrumptious. Maybe I’ll try this recipe soon!
I love a good chicken salad! I’m trying this one…right after I go to the grocery store :)
One of our go to meals is pancakes. I make them for lunch every Sunday after church because they take so little time and effort and everyone loves them!

cheese tortellini and red sauce… we always have some on hand, and its the only thing I know how to cook! LOL! It pays to have a chef as a husband ;)
for the summer my go-to meal it happens to be chicken salad as well. I usually buy the cans of chicken (which I drain) cut up an granny smith apple (because my husband is not in love with celery), cut up some pickles, I usually put some Ranch dressing in it (because I don’t like Mayo) and I add a small amount of Dijon Mustard…sometimes I throw other stuff like peppers in there for added “veggie” intake. Mix and serve!

Breakfast for dinner definitely anytime. In the winter cheese tortellini soup-sautee garlic, green onion, carrots, and celery until they are soft, add chicken broth/stock and simmer until a slow boil. Then add frozen cheese tortellini and frozen peas until they are cooked. Serve with bread or crackers, yum. You can also substitute other veggies of course or different frozen pastas.
I love this recipe and Chicken Salad is a favorite at my house! That picture makes me drool. ;) We also eat a lot off “breakfasts” around here. Bacon and eggs, omelets, etc.
BOGO pizzas; if I’m feeling extravagant – Little Caeser’s. Or as we call it “fend” – Whatever raw veggies and fruits we have, some kind of meat(sandwich or leftover), crackers, milk and ranch dressing (for dipping).

I just made chicken salad this week too :o) I copied a recipe a church lady made recently….chicken, mayo, S&P, canned manderin oranges and dried cranberries. Really yummy!
Matty’s not crazy about breakfast for dinner but I love it so anytime I’m making pancakes at 6:00pm the kids say, “oh, daddy’s not home tonight?” ;o)
homemade pizza topped with whatever veggies I happen to have…It’s surprising what the kids will eat when it’s covered with cheese and called pizza.
balsamic chicken. throw chicken breasts into a pan and add 1/4c of balsamic vinegar for every 2c of spaghetti sauce.
I’m a huge breakfast fan and don’t like fixing meals very much. I was bummed to realize tonight that I had already made french toast and fruit salad Monday night–and therefore shouldn’t press my luck with pancakes and bacon by Wednesday. LOL.
Livia and I could eat grilled cheese and tomato soup once a week (through summer even), but my husband, as it turns out, hates grilled cheese.
Taco salad.
We have it AT LEAST once a week, for years and years. I make a yummy sauce with lots of black beans. And we eat it with blue corn tortilla chips.
