In-A-Pinch Meal Talk, cont.

By Moriah on July 20th, 2010

So apparently there are a lot of breakfast-for-dinner types reading this blog.  I don’t make that often since we usually have breakfast foods for… wait for it… breakfast! Plus it’s not really Andy’s preference.

(Although, I’m not sure why that matters now that I think about it, since he’s usually working during the dinner hour anyway.)

I WAS surprised that there was only one person who said taco salad, because that’s our other in-a-pinch meal.

taco salad

(Okay, I’ll try to refrain from snapping photos of my food from now on. It’s just so tempting since food actually, you know, SITS STILL.)

I don’t use anything fancy, just fresh salsa mixed in with ground turkey or beef. Add spinach or whathaveyou and tortilla chips and top with cheese and the kids are good to go. (I add more to mine; my kids have a gag reflex when it comes to sour cream. They do love guac, though.)

And, this was mentioned at least once too, whole wheat pasta and [jar] spaghetti sauce is a close third. (With pureed spinach, of course.)

Oh – I do have one more question: do you have dessert regularly? Do you give your kids a treat after they finish their evening meal? If so, what?

we don’t eat taco anything here and my kids LOVE sour cream :) Pasta and spaghetty sauce is our choice #1, 2 and 3. They also like mac and cheese. I put veggies (whatever I happen to have in the freezer) and meat (ham, chicken, anything works) in it. I give them dessert both after lunch and dinner. They eat so little that I found it to be the only way to encourage them to finish their meal. We do ice cream in the summer and a couple of chocolate chips in the winter. Another fav. treat is a movie. Works every time especially for my 4yo. If he were born to a different family he would have been a couch potato but we are always on the go, so poor little guy considers it a reward to just sit down quietly and stare at the screen :) :)

I totally forgot about taco salad…except we call it nachos. We do that often in a pinch, too. We all love some sour cream so if we don’t have it in the house, we don’t even bother with nachos!

We (unfortunately for my hips) do have dessert or some small treat every night after dinner. My husband likes to have a little something it’s rubbed off on the kids and they’d stage a revolt if we didn’t! Sometimes, it’s just a small piece of chocolate. Other times, I’ll make something like cookies or once in a while a bigger dessert. In the summer, we do a lot of popcicles or ice cream bars.

Oh yeah, I wanted to add this: Since moving to Louisiana, we have learned a new trick for taco salad (that’s what they call it here, too!). A lot of our friends here put Catalina dressing on it. It sounded so gross to me but I finally broke down and tried it and I love it now! Even my kids like it!

interesting question. i usually try to give some sort of dessert after dinner. some desserts i do: fruit cocktail, a banana, cookies or something small like that. after lunch i try to give a snack of some type rather than a dessert like: pretzels, honey nut cheerios, crackers, etc. my son is a big eater (lucky me) so i do the extra to fill him up, not so much to motivate him to eat.

The catalina dressing on Taco Salad is actually good and I have done that, but the best dressing in my opinion to use is the Cheese Fantastico I think it’s from wishbone, but i’m not sure. I just know its cheesy and wonderful.

Dessert is usually nill at my house because my husband doesn’t have much of a sweet tooth, but fruit is almost always available (one of the perks of living in California). But when all else fails, pudding is my go to dessert, add a little cool whip and maybe a cookie or graham cracker and it is on!

Ours have dessert about half the time and it’s usually a piece of Easter or Halloween candy. Once we have Halloween, we throw out the Easter candy. I have no idea how everyone else gets rid of theirs.

I’m not big on dessert but my kids clamor for it. Summer is easy…posicles, ice cream, fruit… but in the winter I maybe make something for dessert once a week. I like pudding because my kids DO NOT eat enough dairy.

I’m with Mindy. That’s what we do too. Sometimes there’s even valentines candy thrown in there.

Whether or not to give it to them is completely a motherly whim. If I feel they’ve eaten mostly healthy for the day, sure.

I don’t keep regular desserts (or the makings) in the house if I can help it. Many a bag of chocolate chips has disappeared with nary a cookie in sight.

I grew up with desserts every evening and have lived to regret it :) So, no. But if they ask for a small bowl of ice cream around 8:00, it’s fine. And I sometimes make a bowl of popcorn.

We do “dessert” pretty often. It’s usually their gummy vitamins (ha!) and “special mommy fruit” (as anything with “special and/or mommy” makes it desireable. Lately, this is peaches). Publix sells 2 inch tall icecream cones and we’ll do those a good deal too–because they think it’s awesome and it’s almost no icecream!

Yay for the shout out! We have taco salad AT LEAST once a week. I make it with black beans and sometime lentils, too, to make the meat stretch (esp since I switched to buying grass fed beef–or other such Food Inc friendly meat product). I fed six people on 1/2 lb of gr beef adding the beans and lentils. Still really yummy. Then I toss in a ton of chili poweder, a half ton of cumin, and a quarter ton of paprika and garlic pdr (if I didn’t chop of fresh garlic). This is a nice meal to throw in the crock pot if you have to be out in the afternoon.

We always eat ours over blue corn tortilla chips, bc it’s more fun.

And, like, ha! My kids do not eat this. I made them a plain cheese quesadilla and make them eat the plain lettuce.

We use a bowl of ice cream as an incentive to Eat Your Veggies! It’s small, and I buy decent ice cream, so at least it counts as a dairy product. And the little guy could use the calories anyway.

My kids will eat anything for ice cream. ANYTHING. And I buy an all-natural brand so hey, I’m good with that.

I love Catalina dressing. It used to be the only kind I’d eat as a kid. I try not to keep desserty things in the house, but I can’t help it when I’m pregnant. Usually I freeze go-gurt tubes and treat them like popsicles. It works! They gobbled down their split pea soup for lunch today with cookies for bribes. Just depends on what type of day we’re having.
